But, really, you’re going to come for the coffee. Baristas here train for six months before being allowed send a cappuccino out into the world. As a consequence, look for a pitch-perfect balance of flavors and a velvety, not meringue-like, foam in which the company logo is deftly etched, freestyle. All the beverages here are poured strictly according to traditional sizing and configurations—no vente chai mocha lattes allowed. Instead, choose between two roasts every day—a complex and sweet espresso and a more robust blend to hold its ground against whole milk.
