Artful presentation accompanies smart 1960s décor and a globally infused menu of contemporary American fare. Evidently the dollar isn’t too strong in this part of the world, however— the $300 Tahitian pearl martini gets the idea across (though please note, proceeds from this one go to Heal the Bay). Sustainability and seasonal availability determine what’s on the menu (beef tenderloin paella style with saffron rice and merguez foam) as well as in front of you (black walnut tables carved from sustainable wood) and in the bathroom (waterless urinals). As one always hopes when it comes to extravagance, all throwaways get diligently composted or recycled.
