The heart (and hearth) of Spark is its array of wood-burning grills. Visible from the dining room through a broad pane of glass, one grill toasts up the restaurant’s signature Neapolitan and Roman style pizzas, with gourmet toppings such as asparagus and goat cheese, while a mesquite-and-oak grill lends a characteristic char to chicken and steak dishes. There’s also a wood-fire rotisserie turning out spit-roasted herb chickens. Other favorites include the pistachio encrusted halibut and the double-cut wood roasted rack of lamb. The mustard walls, cream linens, and Italian pottery lend a rustic touch to the modern space. Through a separate entrance in the rear, you can access Spark’s remodeled wine and martini lounge, where small plates like Kobe sliders and shrimp gazpacho shooters are served alongside $6 mini-martinis during happy hour. While the restaurant draws primarily middle-aged couples, the revamped lounge attracts a younger set.
