The Paseo Cantina is like a Luis Miguel song: traditional and tasteful, with a hint of romance and a touch of cheese. Terracotta walls and fresh roses on every table are understated, while nightly mariachi performances and folklorico dancers are anything but. The menu follows a similar pattern: traditional Americanized favorites like enchiladas and burritos share space with more gourmet choices like grilled salmon with chipotle-cranberry sauce and camarones al tequila. In warm weather, a seat on one of the two outdoor patios is surely the place to kick back a margarita de la casa from the cantina and watch the action on Colorado.
