Miso marinated Chilean sea bass and escargot bourguignon share space on Akira Hirose’s fusion menu, which showcases the best of his Japanese heritage and French training. That means lunchtime bento boxes can come with either grilled duck foie gras or tuna tartare. The popular champagne buffet brunch offers both sushi and roasted leg of lamb. In either culinary tradition, Hirose shines with seafood in preparations such as his lobster bisque, sautéed scallops, and seared yellowfin tuna Napoleon.
